Farro, Zucchini, and Sun-Dried Tomato Salad

Combined with zucchini and sun-dried tomatoes, farro makes a delicious salad— something a little different for a summer barbecue or a picnic. If farro is unavailable, you can substitute wheat berries or spelt or even pearl barley. Although their flavors are not the same, their appearance and chewy texture are similar. To make this salad in advance, prepare all the ingredients, but don’t combine them until you’re ready to serve so that they keep their bright freshness.

Serves 4

 

INGREDIENTS:

  • 1½ cups (9 ounces) pearled farro (see headnote)
  • Salt
  • ½ cup sun-dried tomatoes (not oil-packed), soaked in hot water for 10 minutes
  • ½ small red onion, finely chopped
  • ¼ cup shredded fresh basil
  • ¼ cup chopped fresh parsley
  • 1 tablespoon chopped fresh mint
  • ¼ cup extra-virgin olive oil
  • 2 tablespoons fresh lemon juice
  • 1 tablespoon red wine vinegar
  • Freshly ground pepper
  • 2 small zucchini, scrubbed, trimmed, and cut into small dice

 

 

INSTRUCTIONS:

  1. Bring 6 cups water to a boil in a medium saucepan. Add the farro and 1 teaspoon salt and cook until the farro is tender, about 20 minutes. Drain and place in a serving bowl.
  2. Meanwhile, drain the sun-dried tomatoes, pat dry, and chop into small dice.
  3. Toss the farro with the onion, herbs, oil, lemon juice, vinegar, and salt and pepper to taste. Add the tomatoes and zucchini, toss well, and serve.
