Curried Turkey Loaf

This has a good, rich curry flavor, and it’s great with Cranberry Chutney.

YIELD:  6 servings, each with 4 grams of carbohydrates and 1 gram of fiber, for a total of 3 grams of usable carbs and 29 grams of protein.

 

INGREDIENTS:

  • 2 pounds ground turkey
  • 1 medium onion, chopped fairly fine
  • 2 eggs
  • 2 cloves garlic, crushed
  • 1 to 2 tablespoons curry powder
  • 1 tablespoon salt or Vege-Sal
  • 1 teaspoon pepper

 

 

INSTRUCTIONS:

  1. Preheat the oven to 350°F.
  2. Combine all the ingredients in a big bowl and-with clean hands-squeeze it together until it’s very well combined.
  3. Spray a loaf pan with nonstick cooking spray, and pack the turkey mixture into the pan. Bake for 60 to 75 minutes.
