This classic fresh citrus nectar is so versatile that you can drink it any time. It makes a drink like the best old-fashioned lemonade mixed with orangeade.
MAKES: about 2 quarts
INGREDIENTS:
- 8–10 lemons
- 6–8 oranges
- 3 scant cups sugar
- ½ tsp citric acid
INSTRUCTIONS:
- Pare the zest finely from 1 lemon and 1 orange.
- Put the sugar, zest and 2½ cups water into a pan. Heat gently to make a syrup, then boil for 5 minutes.
- Strain through a sieve into a measuring pitcher; discard the zest. Squeeze enough lemons and oranges to produce the same amount of juice as syrup, keeping the same proportions of half lemon, half orange.
- Mix the syrup and fruit juices together in the pan and add the citric acid, stirring until it has dissolved.
- Pour the nectar into clean, clip-top or corked bottles and sterilize, or pour into freezer containers, seal, and freeze
