Lime marmalade

If you want a change from traditional orange marmalade, this is the recipe to try. Here is another useful marmalade that can be made at any time of year using store-bought fruit. It has great color and flavor.

MAKES: about 3¼ cups

 

INGREDIENTS:

  • juice and pared rind of 12 limes
  • 3 cups warmed sugar

 

INSTRUCTIONS:

  1. Shred the rind pieces finely.
  2. Place the pith and seeds from the limes in a piece of muslin and tie it up with string. Put the lime rind, lime juice, and 7 cups of water into a preserving pan and bring to the boil, then simmer for 1
    hour until the rind is soft.
  3. Add the warmed sugar and stir over a low heat until all the sugar has dissolved, then turn up the heat and boil rapidly to reach setting point.
  4. Remove the muslin bag, then pour the marmalade into warm, sterilized jars and seal.
