INGREDIENTS:

  • 125g Copha, softened
  • 60g castor sugar
  • 1 tsp vanilla essence
  • 1 egg, beaten

  • Pinch of salt
  • 1 tbsp milk
  • 1 cup desiccated coconut for rolling
  • ½ cup jam (any flavor based on preference)

PREPARATIONS:

  1. Preheat oven to 180˚C.
  2. Line baking trays with parchment paper.

METHOD:

  1. In the work bowl of a food processor, cream together softened Copha and castor sugar until well combined.
  2. Add vanilla essence and beaten egg to the mixture. Gradually incorporate the combined desiccated coconut, sifted self-raising flour, and a pinch of salt.
  3. Pour in the milk and mix until a stiff dough forms. Remove the dough from the food processor.
  4. With wet hands, shape the dough into walnut-sized balls. Roll the cookie balls through the desiccated coconut, ensuring they are coated evenly.
  5. Place the coated cookie balls onto the prepared baking trays. Using your thumb, gently press an indentation into the center of each cookie.
  6. Fill each indentation with a small amount of your preferred jam. The jam’s vibrant color will add a delightful contrast to the golden cookies.
  7. Bake the cookies in the preheated oven for 12-15 minutes or until they turn a beautiful golden hue.
  8. Once baked, carefully remove the cookies from the oven and allow them to cool on the tray for 5 minutes. Transfer the cookies to a cooling rack to cool completely.
