INGREDIENTS:

  • 250g Copha
  • 1kg icing sugar, sifted
  • 500g desiccated coconut
  • 3 egg whites
  • 1 tsp vanilla essence
  • Lilac food coloring
  • Lavender flavor
  • 1 tsp dried lavender flowers
  • Violets or lavender icing flowers to decorate

PREPARATIONS:

  • Line a 30cm x 15cm slab tin with baking paper.

METHOD:

  1. In a large bowl, combine the sifted icing sugar and desiccated coconut, mixing well to ensure even distribution. Create a well in the center of the mixture.
  2. Melt the Copha in a small saucepan over low heat. Remove from heat and add the vanilla essence. Pour the Copha mixture into the well created in the dry ingredients.
  3. Whisk the egg whites until they become foamy, ensuring they are not stiff. Gently stir the foamy egg whites into the mixture until thoroughly combined.
  4. Divide the coconut mixture in half. Press half of the mixture evenly into the prepared slab tin. To achieve an even layer, press the mixture with the bottom of a flat-based glass. Place the tin in the refrigerator and allow it to firm up.
  5. Add a few drops of lilac food coloring and lavender flavor to the remaining mixture. Knead the mixture well to achieve an even lilac color and ensure the lavender flavor is evenly distributed. Taste the mixture and adjust the flavor as desired.
  6. Gently press the lilac coconut mixture over the white coconut layer in the slab tin, ensuring it is evenly distributed. Press the mixture firmly to create a smooth surface. Sprinkle the dried lavender flowers over the top and press them gently into the mixture. Return the tin to the refrigerator and allow the coconut ice to set completely.
  7. Once the coconut ice is firm, use a warm knife or a shaped cutter to cut the dessert into your desired shapes.
  8. To add a final touch of elegance, decorate the Lavender and Vanilla Coconut Ice with violets or lavender icing flowers.
