PREP TIME: 20 MINUTES

COOK TIME: 40 MINUTES

SERVES: 6

DIFFICULTY: EASY

INGREDIENTS:

  • 350g penne pasta
  • 2 tablespoons olive oil
  • 500g organic chicken breast fillets, sliced thickly
  • 1 onion, finely chopped
  • 300g white mushrooms, thickly sliced
  • 2 teaspoons sweet paprika
  • 1 tablespoon plain flour
  • ½ cup (125ml) Rosella Organic Tomato Sauce
  • 2 tablespoons Worcestershire sauce
  • 2 teaspoons Dijon mustard
  • 1 cup (250ml) chicken stock
  • 1 cup (250ml) sour cream
  • 2 cups (200g) grated cheese blend
  • Fresh chopped parsley to garnish
  • Broccolini, to serve

INSTRUCTIONS:

  1. Embark on your culinary voyage by cooking the penne pasta in a pot of boiling water, following the guidance provided on the packet. Once perfectly al dente, drain the pasta and lovingly transfer it to a 10-cup capacity baking dish, where its journey towards a scrumptious masterpiece will continue.
  2. To commence the symphony of flavors, preheat your oven to a warm 180°C, inviting a sense of anticipation into your kitchen.
  3. Heat the olive oil in a large non-stick frying pan over a medium-high heat. Here, you will orchestrate the transformation of organic chicken breast fillets into golden delights. Allow them to dance in the pan until they’ve achieved a rich brown hue. As each piece achieves its perfect sear, gracefully transfer them to a plate and allow them to rest, basking in their newfound glory.
  4. In the same pan where the chicken’s performance took place, allow the finely chopped onion and thickly sliced mushrooms to take center stage. Stir them gently, giving them space to showcase their natural beauty, for about 5 minutes. Introduce the sweet paprika and plain flour to the ensemble, conducting a symphony of aromatic notes that will elevate the dish’s profile.
  5. Introduce a crescendo of flavors by stirring in the Rosella Organic Tomato Sauce, Worcestershire sauce, Dijon mustard, and chicken stock. Let the ingredients intertwine in a harmonious dance of flavors, simmering for 5 minutes to achieve the perfect union.
  6. As the crescendo reaches its climax, invite the seared chicken back into the pan, joining the aromatic symphony. Add the sour cream to the ensemble, allowing its creaminess to embrace the other ingredients in a delightful embrace. Witness the pan simmering with excitement and anticipation.
  7. With the stage set and the ensemble perfectly tuned, pour this luscious concoction onto the waiting pasta, ensuring that every morsel is coated in the luxurious sauce. Gently mix the components, creating a harmonious fusion that promises layers of flavor in every bite.
  8. To add the final notes of decadence, sprinkle the grated cheese blend on top of the pasta ensemble. With a sense of elegance, place the baking dish into the preheated oven, allowing the cheese to melt and form a golden crown that will adorn your creation.
  9. As the aroma fills your kitchen and the cheese achieves its melodic transformation, remove the pasta bake from the oven. A gentle sprinkle of freshly chopped parsley adds a touch of freshness and color, while broccolini serves as the ideal accompaniment to this culinary masterpiece.

Step into the world of gastronomic delight with our Chicken Stroganoff Pasta Bake—a fusion of classic flavors and modern comfort that promises to be a symphony of delight on your taste buds. From the tender chicken to the creamy sauce and perfectly cooked pasta, every bite is an invitation to indulge in a culinary masterpiece.
