PREP TIME: 15 MINUTES

COOK TIME: 15 MINUTES

SERVES: 6

DIFFICULTY: EASY

INGREDIENTS:

  • 1 tablespoon vegetable oil
  • 1 onion, finely chopped
  • 1 clove garlic, minced
  • 500g organic pork mince
  • 3cm knob ginger, finely shredded
  • ¾ cup (185ml) Rosella Organic Sweet Chilli Sauce
  • ⅓ cup (80ml) light soy sauce
  • 3 teaspoons sesame oil
  • 230g can water chestnuts, drained and finely diced
  • 3 green onions, finely sliced
  • 3 baby gem lettuces, leaves separated, washed and trimmed
  • 1 carrot, finely shredded
  • Crushed peanuts and extra sweet chilli sauce, to serve

INSTRUCTIONS:

  1. Begin your culinary journey by heating a tablespoon of vegetable oil in a frying pan over medium-high heat. As the oil shimmers, add the finely chopped onion and minced garlic, inviting their aroma to fill your kitchen. Allow them to dance and soften for about 3 minutes, creating a fragrant foundation for your dish.
  2. Introduce the organic pork mince to the pan, and with a skillful hand, break it up as it sizzles and browns. Witness the transformation of the pork into delectable morsels that will become the heart of your creation. This process should take about 4-5 minutes, yielding a satisfying foundation of flavor.
  3. Add the finely shredded ginger, Rosella Organic Sweet Chilli Sauce, light soy sauce, and sesame oil to the pan, orchestrating a symphony of Asian flavors that will take your taste buds on a delightful journey. Let the ingredients mingle and simmer for 5-8 minutes, allowing the flavors to meld and the sauce to thicken.
  4. To add an element of crunch and texture, incorporate the finely diced water chestnuts into the mixture. Their crispiness will provide a delightful contrast to the tender pork mince, creating a harmonious balance that defines this dish.
  5. Stir in the finely sliced green onions, imparting a refreshing burst of color and mild onion flavor to the ensemble.
  6. The stage is set for the grand finale—a presentation of flavors within the embrace of baby gem lettuce leaves. Spoon the pork mixture into these natural vessels, allowing each bite to be a delightful fusion of tastes and textures.
  7. Enhance the experience by topping the filled lettuce leaves with finely shredded carrot and crushed peanuts, creating a visual and sensory masterpiece that beckons your palate.
  8. As a final touch of culinary finesse, drizzle extra sweet chilli sauce over the creation, infusing every bite with an extra layer of zing and spice.
  9. Why limit the joy to just one occasion? The versatility of this dish shines through in its meal-prepping potential. Double the batch and freeze portions for effortless weeknight dinners or when entertaining guests.
