- 1 tbsp. olive oil, plus extra for drizzling
- 2 tbsps. (40 g) Western Star Original Butter
- 2 cloves garlic, finely chopped
- ¼ tsp. ground nutmeg
- 150 g baby spinach, washed and finely chopped
- 500 g tub Perfect Italiano Ricotta
- ½ cup (50 g) Perfect Italiano Parmesan Grated
- 16 cannelloni tubes
- 1 x 700 ml bottle passata
- 2 ¼ cups (200 g) Perfect Italiano Mozzarella
- Mixed green salad, to serve
INSTRUCTIONS:
- Preheat your oven to 180°C / 160°C fan-forced.
- In a large non-stick frypan, heat the olive oil and butter. Add the chopped garlic and cook for a few minutes until fragrant. Sprinkle in the ground nutmeg, then add the baby spinach. Cook for approximately 5 minutes until the spinach is wilted. Transfer this mixture to a bowl and set it aside to cool.
- Once the spinach mixture has cooled down, add the Perfect Italiano™ Ricotta and ¼ cup of Perfect Italiano™ Parmesan Grated. Mix thoroughly until well combined. To fill the cannelloni tubes, use a piping bag to squeeze the ricotta mixture into each tube.
