Roasted Butterflied Chicken

If you’re looking for an easy and foolproof way to roast a chicken that guarantees crisp skin and incredibly moist meat, then look no further. Butterflying the chicken ensures even cooking and juicy results in both the breast and the legs. Don’t worry about the bird not looking like a traditional whole chicken; the taste and tenderness will more than make up for it. For the juiciest and most flavorful outcome, consider dry-brining the bird and air-drying it overnight before roasting. INGREDIENTS:

  • 1 whole chicken, 3½ to 4 pounds, butterflied (instructions here)
  • 1 tablespoon vegetable, canola, or olive oil
  • Kosher salt and freshly ground black pepper

 

INSTRUCTIONS:

  1. Adjust an oven rack to the upper-middle position and preheat the oven to 450°F.
  2. Start by thoroughly drying the chicken with paper towels. Gently separate the skin from the breasts to create pockets (see instructions here), then rub the chicken evenly all over, including under the skin, with the vegetable, canola, or olive oil. Season the chicken on all sides with kosher salt and freshly ground black pepper. If you have dry-brined the bird, be mindful of the salt, as it may already have been seasoned.
  3. Place a wire rack on a rimmed baking sheet lined with aluminum foil. Position the butterflied chicken on the wire rack so that the breasts are in the center of the baking sheet, and the legs are close to the edges.
  4. Roast the chicken in the preheated oven until the thickest part of the breast close to the bone registers 145°F on an instant-read thermometer, and the joint between the thighs and the body registers at least 160°F. This should take approximately 35 to 45 minutes, depending on the size of the chicken.
  5. Once the chicken is cooked, transfer it to a cutting board, tent it loosely with foil, and allow it to rest for 10 minutes. This resting period allows the juices to redistribute and the meat to become even juicier.
  6. Carve the roasted butterflied chicken and serve it as the centerpiece of a delicious and satisfying meal.
