Pub-Style Thick and Juicy Cheeseburgers

If you’re craving a classic pub-style cheeseburger with a thick and juicy patty, this recipe is for you! Made with freshly ground beef and topped with your favorite cheese, these burgers are perfect for a delicious and satisfying meal. Whether you cook them on the grill or under the broiler, you’ll end up with mouthwatering burgers that will delight your taste buds.

SERVES 4 

 

INGREDIENTS:

  • 2 pounds freshly ground beef (store-bought or home-ground)
  • Kosher salt and freshly ground black pepper
  • 4 deli-cut slices American or cheddar cheese
  • 4 hamburger buns, toasted
  • Condiments and toppings as desired (lettuce, tomato, onion, pickles, etc.)

 

INSTRUCTIONS:

  1. Divide the freshly ground beef into four 8-ounce portions and gently shape each one into a patty approximately 4½ inches wide and ¾ inch thick. Place the patties on a flat surface and create a dimple in the center of each patty by pushing down with three or four fingers. The dimple should be about ¼ inch deep and 3 inches across. Generously season the burgers with kosher salt and freshly ground black pepper. Refrigerate the patties until you’re ready to cook them.

 

Cooking on the Grill:

  1. Ignite a large chimneyful of charcoal. Once the briquettes are coated in gray ash, pour them out and spread them evenly over one side of the grill. Place the cooking grate in place. If you’re using a gas grill, heat one set of burners to high and leave the others off. Make sure to scrape the cooking grate clean.
  2. Place the seasoned burger patties on the cool side of the grill, as far from the heat as possible. Cover the grill and cook until an instant-read thermometer inserted in the center of the burgers reads 110°F for medium-rare or 120°F for medium. This should take around 10 to 15 minutes.
  3. Uncover the grill and transfer the burgers to the hot side. Cook until the first side is well charred, approximately 1 minute. Flip the burgers and add a slice of American or cheddar cheese on top of each patty. Continue to cook until the second side of the burgers is charred and the cheese is melted, about 1 minute longer. The center of the burgers should read 130°F for medium-rare or 140°F for medium. Assemble the burgers on toasted buns and add your favorite condiments and toppings.

 

Cooking under the Broiler:

  1. Preheat the broiler to high. Place the burger patties on a foil-lined broiler pan and position it so that the tops of the patties are 2½ to 3 inches below the broiler element. Broil until the tops are well browned and beginning to char, which should take about 3 minutes. Flip the patties and broil until an instant-read thermometer inserted in the center reads 130°F for medium-rare or 140°F for medium, approximately 3 minutes longer.
  2. Top each patty with a slice of American or cheddar cheese and place them back under the broiler for about 25 seconds to melt the cheese. Place the patties on the toasted buns and add your desired condiments and toppings. Serve and enjoy your pub-style thick and juicy cheeseburgers!
