INGREDIENTS:

  • 1 tablespoon sugar
  • 5 pounds yellow onions (about 5 large), finely sliced (about 7½ cups)
  • 2 tablespoons unsalted butter
  • ¼ teaspoon baking powder
  • Kosher salt
  • ¼ cup dry sherry
  • 6 cups homemade or low-sodium canned chicken stock
  • 2 bay leaves
  • 6 to 8 sprigs fresh thyme
  • Freshly ground black pepper
  • 1 baguette, sliced ½ inch thick and toasted
  • 8 ounces Gruyère or Swiss cheese, grated

 

INSTRUCTIONS:

  1. Caramelizing the Onions: Pour the sugar into a large Dutch oven and cook over high heat, swirling the pot gently as the sugar melts, until it becomes a golden brown caramel.
  2. Add the finely sliced onions to the caramelized sugar and cook, stirring with a wooden spoon and tossing constantly until the onions are evenly coated in the caramel, approximately 30 seconds.
  3. Incorporate the unsalted butter, baking powder, and 2 teaspoons of salt into the caramelized onions. Continue cooking, stirring occasionally, until the onions turn a light golden brown and a brown coating starts to form on the bottom of the pot. This process takes about 10 minutes.
  4. Deglazing and Building Flavor: Add 2 tablespoons of water to the pot and use it to scrape off the browned coating from the bottom. Shake the pot to distribute the onions evenly, then cook, shaking occasionally, until the liquid evaporates and a new brown coating starts to build up again (about 5 minutes).
  5. Repeat the process two more times, adding 2 tablespoons of water each time and scraping off the browned coating. This will result in deep brown caramelized onions with intense flavors.
  6. Adding Flavorful Ingredients: Pour in the dry sherry, chicken stock, bay leaves, and fresh thyme. Bring the mixture to a boil and then reduce to a simmer. Let it simmer, uncovered, for about 15 minutes to deepen the flavors.
  7. Season the soup to taste with salt and freshly ground black pepper. Remove and discard the bay leaves and thyme sprigs.
  8. Serving the Soup: Preheat the broiler.
  9. Ladle the hot soup into four broiler-proof bowls.
  10. Float toasted baguette slices on top of the soup in each bowl.
  11. Generously cover the baguette slices with grated Gruyère or Swiss cheese.
  12. Place the bowls under the broiler until the cheese is melted, bubbly, and golden brown in spots.
