Tostones

Tostones are a delightful and easy-to-make side dish that offers a delectable combination of crispy texture and savory flavor. Made from green-to-yellow plantains or green bananas, these rounds of goodness can be enjoyed warm or at room temperature, as long as they are not made too far in advance. Simple yet satisfying, tostones are typically seasoned with just salt and a hint of lime, but they can be paired with various salsas or hot sauces to suit your taste preferences. INGREDIENTS:

  • 2 green-to-yellow plantains or green bananas
  • Neutral oil, like grapeseed or corn, as needed
  • Salt
  • Lime wedges

 

INSTRUCTIONS:

  1. Peel and Slice the Plantains: Peel the plantains following the instructions and illustrations on the previous page. Cut the peeled plantains into 1/2-inch thick rounds.
  2. Initial Browning: Film the bottom of a large skillet with oil and heat it over medium heat. Once the oil is hot, add the plantain rounds to the skillet in one batch (if possible). Sprinkle the rounds with salt and lightly brown them on one side. Flip the rounds and brown the other side. Transfer the browned plantains to a plate. (At this point, you can set the plantains aside for up to an hour or two before proceeding.)
  3. Pounding the Plantains: Allow the browned plantain rounds to cool slightly. Place each round between two pieces of wax paper and pound it with the side of your fist or the palm of your hand. This will flatten the rounds and nearly double their diameter, resulting in a squashed appearance with slight splits around the edges.
  4. Final Browning: Once again, film the bottom of the skillet with oil and heat it over medium heat. Brown the pounded plantain rounds on each side in batches (if needed).
  5. Serving: Serve the tostones hot or warm, and sprinkle them with salt and lime juice for added flavor.
