INGREDIENTS:

  • 6 cups torn assorted greens, such as mesclun or any lettuce
  • About 1/3 cup extra virgin olive oil
  • About 2 tablespoons sherry vinegar, balsamic vinegar, or freshly squeezed lemon juice
  • Salt and freshly ground black pepper

 

INSTRUCTIONS:

  1. In a large bowl, place the torn assorted greens, such as mesclun or any lettuce.
  2. Drizzle the greens with approximately 1/3 cup of extra virgin olive oil.
  3. Add about 2 tablespoons of sherry vinegar, balsamic vinegar, or freshly squeezed lemon juice to the greens.
  4. Sprinkle a pinch of salt and some freshly ground black pepper over the greens.
  5. Toss the salad gently to coat the greens with the dressing. Taste and adjust the seasoning if needed.
  6. Serve the simple green salad immediately and enjoy its freshness.

 

VARIATIONS:

Green Salad with Fresh Herbs:

  • Use 5 cups of assorted greens (mesclun or the like).
  • Add 1 cup (more or less) of fresh parsley, dill, mint, or basil leaves, or any combination.
  • Substitute lemon juice for the vinegar or use Lemon Vinaigrette if desired.

 

Watercress and Sesame Salad:

  • Use watercress for the greens.
  • Substitute Soy Vinaigrette for the olive oil and vinegar.
  • Sprinkle toasted sesame seeds over the salad as a garnish.

 

Endive Salad with Nut Oil Vinaigrette:

  • Substitute roughly chopped Belgian endive leaves for the assorted greens.
  • Add radicchio, watercress, and other strong-flavored greens if desired.
  • Toss in approximately 1/2 cup of toasted walnuts or hazelnuts.
  • Use Nut Oil Vinaigrette as the dressing.

 

Greek Salad, Simplified:

  • Add about 1/4 cup of chopped fresh mint or parsley leaves, or a combination of both.
  • Include approximately 1/3 cup of crumbled feta cheese.
  • Add about 1/4 cup of pitted and roughly chopped black olives.
  • Use lemon juice in place of vinegar.

 

Mesclun with Goat Cheese and Croutons:

  • Add 4 ounces of soft goat cheese.
  • Prepare Real Croutons (refer to the corresponding recipe) and place them on top of each serving.
