MAKES: 1 1/2 cups

INGREDIENTS:

  • 1 1/2 cups firmly packed chopped fresh cilantro leaves
  • 1/2 cup firmly packed fresh mint leaves
  • 1 to 2 Thai or other hot fresh green chiles, seeded if desired, or hot red pepper flakes to taste
  • 2 inches fresh ginger, cut into chunks
  • 1/2 red onion, quartered
  • 2 cloves garlic, peeled
  • 1/4 cup freshly squeezed lime juice
  • 1/2 teaspoon salt, or more to taste

 

INSTRUCTIONS:

  1. In a food processor, combine the cilantro, mint, green chiles, ginger, onion, and garlic. Pulse the mixture until finely ground.
  2. Add the lime juice and salt to the food processor. Process the mixture until it becomes nearly smooth. If needed, add up to 1/4 cup of water to help the food processor blend the ingredients smoothly.
  3. Taste the chutney and adjust the seasoning according to your preference. You can add more salt if needed. Refrigerate the chutney for up to a day to allow the flavors to meld together. Serve the chutney at room temperature.

 

VARIATION:

  • Creamy Cilantro-Mint Chutney Variation: To make a creamy version of the chutney, you can add yogurt to the mixture. Simply stir in 1/2 cup or more of good-quality yogurt to the prepared chutney. Adjust the seasoning as needed and serve.
  • Long-Lasting Cilantro-Mint Chutney Variation: If you want to extend the shelf life of the chutney, you can make a long-lasting version. Increase the amount of garlic to 5 cloves and replace the lime juice with 1/2 cup of white wine vinegar. Cover and refrigerate the chutney, and it can be stored for several weeks.
