Sweet Yeast Dumplings

INGREDIENTS:

  • 2 tablespoons dry yeast
  • 1 cup warm milk
  • 1 teaspoon sugar
  • 4 tablespoons butter, softened
  • Pinch of salt
  • 2 1/2 cups flour, plus more for rolling out
  • 2 eggs
  • 1/3 cup oil

 

INSTRUCTIONS:

  1. In a bowl, dilute yeast with milk and sugar. When the mixture becomes foamy, add softened butter, salt, sifted flour, and eggs. Knead the dough until it becomes smooth, holds together, and is no longer sticky.
  2. Cover the bowl with a towel and set it in a warm place. Allow the dough to rise for 1 hour or until it doubles in size.
  3. On a floured work surface, punch the dough down and roll it out with a floured rolling pin, leaving it 1-inch thick. Using a glass dipped in flour, cut out circles of dough about 2 inches in diameter. Place the circles on a sheet. Cover and let them rise for 30 minutes.
  4. In a Dutch oven or a heavy kettle with a close-fitting cover, heat oil.
  5. When the oil is hot, add the dough rounds, leaving space for them to expand. Quickly pour in 1 cup of warm water and immediately close the lid. Cook for 10 minutes.
  6. Remove the lid, lift the dumplings with tongs onto a platter, and keep them warm.
  7. Cook the remaining batches in the same manner.
  8. The Sweet Yeast Dumplings are ready when a golden crust begins to form. Serve with a compote of stewed fruit, fresh or dried, or with fruit canned in syrup. Ensure there is plenty of sweet juice to accompany them.
