INGREDIENTS:

  • 1 pound ground beef
  • 1 pound pork sausage meat
  • 2 slices day-old bread, soaked in milk and squeezed dry
  • 3 eggs
  • 2 onions, finely chopped
  • Pepper and salt
  • 1/4 cup flour
  • 1/4 cup olive oil
  • 1 16-ounce can crushed tomatoes
  • 1/4 cup tomato paste
  • 1 cup olives, green or black
  • 1 cup white mushrooms, sliced

 

INSTRUCTIONS:

  1. In a bowl, combine the ground beef, pork sausage meat, soaked bread, eggs, 1 chopped onion, pepper, and salt. Mix thoroughly. Form the mixture into balls, about the size of an apricot.
  2. Place flour in a small bowl. Roll the meatballs in flour. Reserve them on a paper towel.
  3. In a skillet, heat olive oil. Fry the meatballs until they are browned all over. Drain them on a paper towel.
  4. In a heavy casserole, heat 1 tablespoon of oil and fry the remaining chopped onion. Stir in flour and, after a minute, add 1 cup of warm water to thicken the sauce. Then, add the crushed tomatoes, tomato paste, pepper, salt, and another 1–2 cups of water. Simmer for 10 minutes.
  5. Add the meatballs, olives, and mushrooms to the casserole. Let them simmer for 1 hour. Watch the level of liquid and add water if necessary, but the sauce should be slightly thick. Adjust the seasoning and serve.
