INGREDIENTS:

  • 1 (13-ounce/370-gram) ball Master Dough, preferably with starter, made with Poolish
  • 4 parts flour mixed with 1 part semolina, for dusting
  • CAMPARI SYRUP
    • ⅓ cup (75 grams) Campari
    • ¼ cup (65 grams) blood orange syrup, such as Torani
    • Few drops of Angostura bitters
  • 1 ounce (30 grams) sliced pancetta
  • 7 ounces (200 grams) whole-milk mozzarella cheese, shredded (1¾ cups)
  • Red pepper flakes, for sprinkling
  • 1.5 ounces (45 grams) fresh goat cheese, preferably Laura Chenel
  • 2 ounces (55 grams) escarole, thick stems removed, cut into ¾-inch (2-centimeter) pieces
  • 2 ounces (30 grams) Peppadew peppers, cut into strips
  • Extra virgin olive oil, for drizzling

 

PREPARATIONS:

  1. Prepare the Campari syrup by boiling Campari, blood orange syrup, and Angostura bitters until the consistency resembles maple syrup. Transfer to a squeeze bottle and store at room temperature for up to 3 days.
  2. Cut the pancetta into lardons and cook them in a skillet until partially cooked. Set aside without draining.
  3. Prepare the dough ball and allow it to warm to 60°F to 65°F at room temperature.
  4. Dust the work surface and roll out the dough into a 13-inch round.
  5. Place mozzarella cheese and pancetta evenly over the dough and bake.
  6. Top the baked pizza with red pepper flakes, crumbled goat cheese, escarole, Peppadew peppers, and drizzle with Campari syrup and olive oil.

 

YIELD:

  • One 13-inch pizza with 6 slices.
