World’s Best Green Beans

I LOVE THESE green beans! Everyone loves these green beans—even though they are not the prettiest vegetables I have ever served. When I make them, I can count on at least half disappearing before I get the bowl to the table. Once you try one, you will want to eat more. We enjoy them as a side dish, snack, or hors d’oeuvre. All gardeners should have this recipe in their repertoires, because it calls for a huge pile of green beans and leaves the family clamoring for more.

SERVES 4 TO 6

 

INGREDIENTS:

  • 2 pounds green beans, ends trimmed
  • 2 tablespoons extra virgin olive oil
  • Coarse sea salt or kosher salt

 

 

INSTRUCTIONS:

  1. Preheat the oven to 500°F. Lightly oil a large shallow roasting or half sheet pan.
  2. Arrange the green beans in a single, uncrowded layer in the pan. Drizzle the oil over the beans and roll until evenly coated.
  3. Roast for about 15 minutes, until the beans are well browned, shaking the pan occasionally for even cooking.
  4. Transfer the beans to a serving bowl and sprinkle with salt to taste. Serve immediately.
