I LOVE THESE green beans! Everyone loves these green beans—even though they are not the prettiest vegetables I have ever served. When I make them, I can count on at least half disappearing before I get the bowl to the table. Once you try one, you will want to eat more. We enjoy them as a side dish, snack, or hors d’oeuvre. All gardeners should have this recipe in their repertoires, because it calls for a huge pile of green beans and leaves the family clamoring for more.
SERVES 4 TO 6
INGREDIENTS:
- 2 pounds green beans, ends trimmed
- 2 tablespoons extra virgin olive oil
- Coarse sea salt or kosher salt
INSTRUCTIONS:
- Preheat the oven to 500°F. Lightly oil a large shallow roasting or half sheet pan.
- Arrange the green beans in a single, uncrowded layer in the pan. Drizzle the oil over the beans and roll until evenly coated.
- Roast for about 15 minutes, until the beans are well browned, shaking the pan occasionally for even cooking.
- Transfer the beans to a serving bowl and sprinkle with salt to taste. Serve immediately.
