Yield: 2 servings

Prep Time: 5 minutes

Cooking Time: Vegetables 5–6 minutes, Omelet 14–16 minutes

Total Time: 24–27 minutes

INGREDIENTS:

  • ¼ cup chopped onion
  • ¼ cup chopped bell pepper, green or red
  • ¼ cup diced ham
  • 1 teaspoon butter
  • 4 large eggs
  • 2 tablespoons milk
  • ⅛ teaspoon salt
  • ¾ cup grated sharp Cheddar cheese

INSTRUCTIONS:

  1. Prepare the Vegetables: Start by placing the chopped onion, chopped bell pepper, diced ham, and butter in the air fryer baking pan. Set the air fryer temperature to 390°F (200°C) and cook for 1 minute. After the initial minute, give the ingredients a stir. Continue cooking for an additional 4 to 5 minutes, or until the vegetables are tender.
  2. Prepare the Egg Mixture: In a bowl, beat together the 4 large eggs, 2 tablespoons of milk, and ⅛ teaspoon of salt. This mixture will form the base of your omelet.
  3. Combine and Cook: Pour the egg mixture over the cooked vegetables and ham in the baking pan. Adjust the air fryer temperature to 360°F (180°C) and cook for 13 to 15 minutes, or until the eggs have set and the top of the omelet has browned slightly.
  4. Add Cheese: Once the omelet is cooked and set, sprinkle the grated sharp Cheddar cheese evenly over the top.
  5. Melt the Cheese: Return the baking pan to the air fryer and cook for an additional 1 minute, or just long enough to melt the cheese.
