Halloumi is a delicious, hearty Middle Eastern cheese that blooms in flavor once it’s cooked. This
recipe is simple and perfect for the kebab novice. 1 package (8 ounces, or 225 g) halloumi cheese
MAKES 6 KEBABS
INGREDIENTS:
- 2 small zucchini
- 1 red onion
- 6 skewers
- ¼ teaspoon salt
- ¼ teaspoon black pepper
- Olive oil
INSTRUCTIONS:
- Cut the halloumi cheese into 1¾-inch (4.5 cm) cubes (rectangles). Cut the zucchini into ¾-inch (2 cm) rounds. Peel and cut the red onion into 1¾-inch (4.5 cm) pieces.
- Preheat the grill for medium-high heat. When the grill is ready, oil the grill grates right before putting on the kebabs. Using long-handled tongs, dip some folded paper towels in a high smoke point cooking oil and wipe down the grill grates, making at least three good passes to create a nonstick surface.
- Thread the halloumi onto the skewers, alternating with the zucchini and red onion pieces. Make sure that the cut sides face downward, so that a larger surface area will hit the grill. Brush the kebabs with olive oil on both sides and season well with salt and black pepper.
- Place the kebabs on the grill. Cook for a total of 7 to 8 minutes, turning once or twice during the cooking process.
- Remove the kebabs from the grill and serve.
NOTE:
- For a vegan option, use extra-firm tofu instead of the halloumi cheese.
