  • 1/2 cup almond milk, at room temperature
  • 1/4 cup warmed coconut oil
  • 3 mashed bananas
  • 3 carrots, grated
  • 3/4 cup chopped walnuts

 

INSTRUCTIONS:

  1. Preheat the oven to 350 degrees F (175 degrees C).
  2. In a large mixing bowl, add the almond flour, lucuma powder, cinnamon, baking powder, baking soda, and salt. Mix well.
  3. Add the almond milk, warmed coconut oil, hemp hearts, and mashed bananas to the bowl. Mix until well combined.
  4. Stir in the grated carrots and chopped walnuts.
  5. Transfer the mixture to the slow cooker and spread it evenly.
  6. Cook on high for 2 hours or on low for 4 hours.
  7. After cooking, let the cake cool for 10 minutes in the slow cooker. Then, remove it from the pan and let it cool completely.
  8. Store the cake covered.
