INSTRUCTIONS:

  1. Prep and Rinse the Potatoes: Peel the russet potatoes and cut them into rough 1- to 2-inch chunks.
  2. Transfer the potato chunks to a colander and rinse them under cold water until the water runs clear. This step helps remove excess starch, contributing to a fluffier texture in the final dish.
  3. Boil the Potatoes: In a Dutch oven or stockpot, bring 4 quarts of water to a boil over high heat.
  4. Add the prepared potato chunks to the boiling water and cook until they are completely tender when pierced with the tip of a knife. This typically takes about 15 minutes.
  5. Heat Milk and Butter: While the potatoes are cooking, heat the whole milk and unsalted butter in a small saucepan over medium heat. Stir occasionally until the butter is fully melted.
  6. Drain and Rice the Potatoes: Drain the cooked potatoes in a colander and rinse them under hot running water for 30 seconds, washing away any remaining starch.
  7. Set a ricer or food mill over the now-empty pot and pass the drained potatoes through it. This process ensures a smooth and lump-free texture in the mashed potatoes.
  8. Combine with Milk and Butter: Add the heated milk and butter mixture to the riced potatoes.
