INGREDIENTS:

  • 8 ounces (2 cups) elbow macaroni
  • Salt and pepper
  • 2 tablespoons vegetable oil
  • 2 onions, chopped fine
  • 1 red bell pepper, stemmed, seeded, and chopped fine
  • 6 garlic cloves, minced
  • 2 tablespoons chili powder
  • 1 tablespoon ground cumin
  • 1½ pounds 85 percent lean ground beef
  • 1 (28-ounce) can tomato puree
  • 1 (14.5-ounce) can of diced tomatoes
  • 1 tablespoon brown sugar
  • 10 ounces Colby Jack cheese, shredded (2½ cups)

 

PREPARATIONS:

  1. Adjust the oven rack to the middle position and preheat the oven to 400 degrees Fahrenheit. Bring 4 quarts of water to a boil in a large Dutch oven. Add the macaroni and 1 tablespoon of salt. Cook, stirring often, until the pasta is nearly al dente. Reserve ¾ cup of the cooking water, then drain the pasta and set it aside.
  2. Dry the now-empty pot, add the vegetable oil, and heat it over medium heat until shimmering. Add the chopped onions, red bell pepper, and ¾ teaspoon of salt. Cook until softened, approximately 8 to 10 minutes. Stir in the minced garlic, chili powder, and ground cumin, and cook until fragrant, about 1 minute. Add the ground beef and cook, breaking it up with a wooden spoon, until it is no longer pink approximately 5 to 8 minutes.
  3. Stir in the tomato puree, diced tomatoes, brown sugar, and ¾ cup of the reserved cooking water. Cover the pot partially, leaving about 1 inch open, and simmer, stirring occasionally, for about 20 minutes to allow the flavors to blend.
  4. Remove the pot from heat and season with salt and pepper to taste. Stir in the cooked pasta, breaking up any clumps, and then stir in 1 cup of the shredded cheese. Pour the mixture into a 13 by 9-inch baking dish. Sprinkle the remaining 1½ cups of shredded cheese over the top.
  5. Bake the chili mac until it is bubbling around the edges and the cheese is spotty brown approximately 15 minutes. Let it cool for 10 to 15 minutes before serving.
