INGREDIENTS:
- 1 tablespoon vegetable oil
- 1 brown onion, finely diced
- 1 carrot, finely diced
- 375g Passage to India Tikka Masala Simmer Sauce
- 1 zucchini, finely diced
- 1½ cups broccoli florets
- 100g green beans, cut into 2cm pieces
- Kernels from 1 cob of corn
- 4 sheets ready-rolled frozen puff pastry
- 1 egg, whisked
- 1 tablespoon sesame seeds
- Mango chutney, to serve
INSTRUCTIONS:
- In a large non-stick frying pan, heat the vegetable oil over medium heat. Add the diced onion and carrot, and cook for 5 minutes or until they become softened. Pour in the Passage to India Tikka Masala Simmer Sauce and 1/3 cup of water. Bring the mixture to a boil.
- Add the finely diced zucchini, broccoli florets, green beans, and corn kernels to the simmering sauce. Stir well to combine the vegetables with the flavorful sauce. Continue to cook for about 4 minutes or until the vegetables become tender. Once done, set the mixture aside to cool.
- Preheat your oven to 200°C / 180°C fan-forced. Place a baking tray in the oven to heat. Grease 4 metal pie tins to prepare them for the pies. Cut 4 rounds of 13cm from the puff pastry sheets. Line the prepared pie tins with the pastry rounds.
- Spoon the cooled vegetable curry mixture into the pie shells, distributing it evenly among the pies. Cut 4 rounds of 12cm from the remaining puff pastry. Brush the edges of the pastry shells with water to seal the pies. Cover the pie filling with the pastry rounds and press down to seal. Brush the top of each pie with the whisked egg and sprinkle sesame seeds over them. Cut a small cross on the top of each pie to allow steam to escape during baking.
- Place the prepared pies onto the hot baking tray in the oven. Bake for approximately 25 minutes or until the pies turn golden and crisp, creating a tantalizing aroma that fills the kitchen.
