Three Flavoured Butters For Roast Chicken Or Turkey

INGREDIENTS:

Shallot, Oregano, and Lemon Butter:

  • 185 g Western Star Original Salted Butter, softened
  • 2 large French shallots, finely chopped
  • 2 tablespoons fresh oregano, finely chopped
  • 1 tablespoon finely grated lemon rind

 

Spiced Citrus Butter:

  • 185 g Western Star Original Salted Butter, softened
  • Finely grated rind of 1 orange
  • Finely grated rind of 1 lime
  • ½ teaspoon cinnamon
  • Pinch ground cloves
  • Freshly ground black pepper, to taste

 

Spring Onion, Chilli, and Lime Butter:

  • 185 g Western Star Original Salted Butter, softened
  • 4 spring onions
  • 2 small red chillies, seeded and finely chopped
  • Finly grated rind of 2 limes

 

METHOD:

To Make Any of the Flavoured Butters:

  1. In a bowl, combine all the ingredients for your chosen butter until smooth and well combined.
  2. Place the flavored butter on a large piece of baking paper, then roll it up to form a log shape.
  3. Twist and tie the ends of the baking paper using kitchen twine to secure the log.
  4. Refrigerate the butter log until it’s ready to be used.

 

NOTES:

  • Leftover butter can be portioned and frozen, and then defrosted as needed.
  • These versatile flavored butters can be used in various dishes. Try them with steamed asparagus, green beans, omelettes, or spread over grilled steak or chicken.
  • For an exceptionally flavorful and moist roast chicken or turkey, gently separate the skin from the breast meat to create pockets. Stuff a handful of your chosen flavored butter into each pocket and massage it evenly over the meat. Roast the bird as usual for a mouthwatering result.
