INGREDIENTS:
- Thighs, drumsticks, and wings of 1 chicken
- Thighs and forelegs of 1 rabbit
- 3/4 pound veal breast
- 3/4 pound pork shoulder
- 1/2 pound pork fatback, in strips
- Pepper and salt
- 3 onions, finely chopped
- 3 sprigs thyme
- 3 bay leaves
- 3 tablespoons gelatin
- 1 cup white wine or gin
INSTRUCTIONS:
- Preheat the oven to 350°F (175°C).
- Bone the chicken, rabbit, veal breast, and pork shoulder, and cut them into rough pieces.
- Lay half of the pork fatback strips on the bottom of an ovenproof dish with a cover. Alternate layering the chicken, rabbit, veal, and pork pieces in the dish, seasoning each layer with pepper and salt as you go. Fill any gaps with the finely chopped onions. Press the meats down firmly in the dish. Place the sprigs of thyme and bay leaves on top.
- Dilute the gelatin in the white wine or gin. Pour the mixture over the meats, adding enough liquid to just cover the meats. Lay the remaining pork fatback strips on top. Put the cover on the dish.
- Bake the terrine in the preheated oven for 3 hours. After baking, allow it to cool, and then refrigerate it.
- Serve the Terrine of Mixed Meats cold. It can be sliced and enjoyed on its own or served with bread or toast. The dish pairs well with a good Chti beer from the Nord region.
