Tender Fancypants Omelet

INGREDIENTS:

  • 3 large eggs
  • 1 large egg yolk
  • ½ teaspoon kosher salt
  • ¼ teaspoon freshly ground black pepper
  • 1 tablespoon whole milk
  • 1 tablespoon chopped mixed fresh herbs, such as parsley, tarragon, and chives (optional)
  • 1½ tablespoons unsalted butter, cut into ¼-inch cubes and chilled

 

INSTRUCTIONS:

  1. In a medium bowl, combine the 3 large eggs, egg yolk, kosher salt, freshly ground black pepper, whole milk, and chopped fresh herbs (if using). Whisk the mixture until it becomes homogeneous and frothy, which usually takes about 1 minute. Allow the egg mixture to rest at room temperature for at least 15 minutes. During this time, you’ll notice the eggs darkening in color significantly.
  2. Add two-thirds of the chilled unsalted butter to the egg mixture. Melt the remaining butter in an 8-inch nonstick skillet over low heat.
  3. Pour the egg mixture into the skillet and cook over low heat, stirring slowly and constantly with a silicone spatula. Carefully scrape the eggs off the bottom and sides of the skillet as they begin to set, which usually takes about 2 minutes.
  4. Continue cooking the eggs, stirring and scraping gently, until they are just firm enough to hold their shape when you draw the spatula through them.
  5. Shake the pan to distribute the eggs evenly over the bottom. Then, hold the handle so that the pan rests at a slight angle and rap the pan against the stove so that the eggs are thicker on one side of the pan than the other.
  6. Remove the skillet from the heat, cover it, and let the eggs set to the desired consistency, which takes about 1 minute.
  7. Remove the lid and, using the spatula, carefully roll the omelet, starting from the thicker side. Tuck the ends under to create a neat roll.
  8. Carefully turn the rolled omelet out onto a plate (holding the plate in one hand and the pan in the other can help). Adjust the shape if needed, and your Tender Fancypants Omelet is ready to be served immediately.
