Presenting Super-Quick Quinoa and Black Bean Sliders: A delightful combination of quinoa and black beans, with soy-free potential, that will amaze your taste buds! These sliders are not just for traditional burger buns; they are versatile and can be enjoyed in various creative ways. Whether you savor them on salads or as fritters with salsa for dipping, these sliders are the epitome of flavor and convenience. Prepare to be addicted to their irresistibly crispy exterior.

YIELD: 8 sliders

INGREDIENTS:

  • 1 cup (172 g) prepared black beans
  • 2 cups (340 g) Corn-oa
  • 2 tablespoons (30 ml) prepared barbecue sauce
  • 1/3 cup (38 g) all-purpose flour, more if needed
  • Neutral-flavored oil, for cooking
  • Buns, lettuce, tomato slices, bell pepper rings, pickles, other condiments of choice

INSTRUCTIONS:

  1. In a medium-size bowl, place the prepared black beans. Use your hands or a potato masher to mash the beans until they become mostly pasty. Some whole beans are okay for texture. Mix in the Corn-oa and barbecue sauce until well combined.
  2. Add the all-purpose flour to the bean mixture and stir well. The mixture should hold together firmly. If it doesn’t, return the mixture to the bowl and add an additional tablespoon (8 g) of flour, mixing again to achieve the right consistency.
  3. Use a 1/4 cup (60 ml) measuring cup to scoop the mixture. Pat and press the mixture into a patty about 1/2-inch (1.3 cm) thick.
  4. In a large skillet, heat a thin layer of neutral-flavored oil over medium-high heat.
  5. Cook the sliders in batches until they become browned and crispy, which usually takes about 4 to 5 minutes on each side. Turn them over to cook the second side for an additional 3 to 5 minutes until browned and crispy.
  6. Serve these scrumptious sliders with your favorite buns, lettuce, tomato slices, bell pepper rings, pickles, or any other condiments you desire.
