Stir-Fried Broccoli

StirFried Broccoli is a versatile and delicious dish that showcases the wonderful crunch of the broccoli stems and the tenderness of the florets. It’s a perfect addition to any stir-fry recipe and can even be the main ingredient. Feel free to use other vegetables like cauliflower, brocco-flower, Romanesco, or broccoli raab as well.

MAKES: 4 servings

TIME: 30 minutes

 

INGREDIENTS:

  • 2 tablespoons peanut oil or neutral oil (like grapeseed or corn)
  • About 1 1/2 pounds broccoli, trimmed, with stems cut into thin pieces (no more than 1/8 inch thick)
  • Salt
  • 1 teaspoon sugar
  • 1 cup stock (or water)
  • 2 tablespoons soy sauce

 

INSTRUCTIONS:

  1. Heat the oil in a large, deep skillet over medium-high heat.
  2. Once the oil is hot, add the broccoli to the skillet and raise the heat to high. Stir-fry the broccoli for about 5 minutes, until it becomes bright green, glossy, and begins to brown.
  3. Sprinkle the broccoli with salt and add the sugar and stock to the skillet. Stir and continue cooking until almost all the liquid evaporates, and the broccoli becomes tender, approximately 5 minutes more.
  4. Stir in the soy sauce and taste the dish. Adjust the seasoning if needed.
  5. Serve the Stir-Fried Broccoli as a flavorful side dish or as the main ingredient in a stir-fry.

 

VARIATION:

Stir-Fried Broccoli with Dried Shiitakes:

  • Soak about 1/4 cup of dried black (shiitake) mushrooms in 1 cup of very hot water until tender. If the water cools off before they’re tender, change the water. Drain the mushrooms, reserving the liquid, and trim and cut them up.
  • In Step 1, add the soaked mushrooms along with the broccoli.
  • In Step 2, add 1 teaspoon minced garlic and 1 teaspoon minced fresh ginger along with the salt and sugar. Stir for 15 seconds before adding the strained mushroom-soaking liquid instead of the stock.

  • Fresh broccoli selection: Choose fresh broccoli with firm florets and vibrant green color. Look for stems that are firm and not woody. Avoid broccoli with yellowing or wilting florets.
  • Prepping the broccoli: Trim the tough ends of the broccoli stems and peel the outer layer if needed. Cut the stems into thin, even slices (no more than 1/8 inch thick) to ensure quick and even cooking.
  • High heat stir-frying: Use a large, deep skillet or wok and preheat it over medium-high to high heat before adding the oil. This helps achieve a quick and vibrant stir-fry with a slight char on the broccoli.
  • Choosing the oil: Peanut oil is commonly used for stir-frying due to its high smoke point and distinct nutty flavor. Alternatively, you can use neutral oils like grapeseed or corn oil, which have a milder taste.
  • Stir-fry in batches: To ensure proper cooking and browning, avoid overcrowding the skillet or wok. Stir-fry the broccoli in batches if needed, allowing space for even heat distribution and browning.
  • Balancing flavors: The addition of salt and sugar helps enhance the natural sweetness of the broccoli. Adjust the seasoning according to your taste preference. You can also add a dash of white pepper or a squeeze of lemon juice for additional flavor variation.
  • Adding soy sauce: Stir in the soy sauce towards the end of cooking to coat the broccoli evenly. Adjust the amount of soy sauce based on your desired saltiness.
  • Texture control: If you prefer your broccoli to be more tender, cook it for a longer duration. For a crisper texture, reduce the cooking time slightly. Be mindful not to overcook the broccoli, as it should retain some crunch.
  • Dried shiitake mushroom variation: Soaking dried shiitake mushrooms in hot water helps rehydrate them and enhance their flavor. Use the mushroom-soaking liquid as a substitute for the stock to infuse the dish with rich umami flavors.
  • Serving suggestions: Stir-Fried Broccoli is versatile and pairs well with various proteins like chicken, beef, or tofu. Serve it over steamed rice or alongside noodles for a complete meal. Garnish with toasted sesame seeds or sliced green onions for added visual appeal.
  • Leftover cooked broccoli: If you have cooked broccoli leftovers, you can use them in this recipe by stir-frying just until heated through. This prevents overcooking and maintains the freshness of the broccoli.
