Steamed Artichokes

The best way to cook artichokes simply is to steam them, because you don’t have to wait for a big pot of water to boil and, more important, they don’t become soggy. You can add some gentle seasonings to the pot if you like: Tarragon or thyme, onion or garlic, lemon juice or vinegar are all good. Serve the artichokes hot, warm, at room temperature, or cold.

MAKES: 4 servings

TIME: 45 minutes

 

INGREDIENTS:

  • 4 large or 12 small artichokes
  • Melted butter
  • Vinaigrette
  • Mayonnaise (optional)
  • Lemon wedges
  • Olive oil
  • Salt

 

INSTRUCTIONS:

  1. Prepare the artichokes by cutting off the pointed tips from the tops and outer leaves using scissors or a sharp knife.
  2. Cut the artichokes in half and then into quarters. Scrape out the fuzzy choke from each quarter.
  3. Set up a steamer and place the artichokes in it with the bottom side up.
  4. Cover the steamer and steam the artichokes for 20 to 40 minutes, or until the outer leaves pull away easily and the meat is tender. Sample an outer leaf to check for doneness.
  5. Once cooked, drain the artichokes upside down for a minute or two longer.
  6. Serve the artichokes hot with melted butter, at room temperature with vinaigrette, or cold with mayonnaise.
  7. Alternatively, you can serve the artichokes at any temperature with lemon wedges, olive oil, and salt. Adjust the seasoning to your liking.

 

TIPS FOR STEAMED ARTICHOKE:

  • When selecting artichokes, look for ones that feel heavy and have tightly closed leaves. Avoid artichokes that feel dry or have leaves that are spreading open.
  • To prevent browning, rub the cut surfaces of the artichokes with lemon juice.
  • Steaming time may vary depending on the size and freshness of the artichokes. Check for doneness by pulling off an outer leaf; it should come off easily and the meat should be tender.
  • To enhance the flavor, add seasonings such as tarragon, thyme, onion, garlic, lemon juice, or vinegar to the steaming water.
  • If you don’t have a steamer, you can also use a large pot with a steaming basket or colander placed inside. Just make sure the water doesn’t touch the bottom of the artichokes.
  • Serve the artichokes with a dipping sauce of your choice, such as melted butter, vinaigrette, or mayonnaise. Lemon wedges, olive oil, and salt are also simple yet delicious accompaniments.
  • Artichokes can be enjoyed hot, warm, at room temperature, or cold, making them a versatile dish for different occasions.
  • Store any leftover cooked artichokes in the refrigerator, upside down to retain moisture, and consume within a few days for the best flavor and texture.
