Squash Casserole Recipe

Squash casserole is a perfect comfort food. The combination of squash, onions, cheese and sour cream will turn out incredibly delicious and amazing.

Squash casserole is a staple dish across the South. The vegetable are smothered in cheese and cream and topped with crunchy butter crackers. This casserole is wholesome and delicious and you would not be able to resist but come back for seconds.

It is a hearty and full meal on its own for vegetarians but you can also serve some fried chicken with it to add some protein in your meal.

The best tip for squash casserole is to get as much liquid as possible out of squash during cooking process to prevent watery or runny casserole at the end.

Preparation time: 15 minutes     Cook time: 30 minutes     Total time: 45 minutes

Ingredients:

  • 1 tablespoon vegetable oil
  • 1 tablespoon butter
  • 2 pound squashes, thinly sliced
  • 1 onion, thinly sliced
  • ½ cup grated parmesan cheese
  • 1 cup shredded sharp cheddar cheese
  • ½ cup sour cream
  • Salt and pepper
  • 1 sleeve crushed butter crackers

Instructions:

  • Preheat the oven to 350F. Grease a 2-quart casserole with butter or baking spray.
  • Heat the oil in a large skillet over medium heat. Melt the butter and stir in the squash and onions until soft for about 10 minutes. Stir the squash often to prevent browning. Try to take out as much liquid as possible. Also remember not to overcook the squash because it still has to be baked. Drain the excess water and transfer into a large bowl.
  • Toss in the parmesan, cheddar, and sour cream. Season with salt and pepper. Gently fold to avoid mashing.
  • Pour the mixture into the greased casserole and sprinkle the crushed crackers evenly on top.
  • Bake for 20 minutes or until the crackers are golden. Let it sit for 10 minutes before serving. Enjoy!
