INGREDIENTS:

  • 1 pound salt cod
  • 6 onions, minced
  • 3 tablespoons olive oil
  • 5 garlic cloves, crushed
  • 1 sprig thyme
  • 6 tomatoes, cut into quarters
  • 7 hot red peppers, seeded and cut into strips
  • 1 cup water

 

INSTRUCTIONS:

  1. Immerse the dried cod in a bowl of water for 24 hours to remove salt, changing the water from time to time.
  2. In a kettle, cook the cod in simmering water for 20 minutes. Drain the cod, remove the skin and bones, and crumble the fish into flakes.
  3. In a skillet, heat the olive oil. Sauté the minced onions until they become translucent.
  4. Add the cooked cod to the skillet. Then add the crushed garlic and thyme.
  5. Stir in the quartered tomatoes, and continue stirring over fairly high heat.
  6. Add the hot red peppers and the water to the skillet. Stir frequently and make sure that the mixture doesn’t burn.
  7. Continue cooking until all the water has evaporated, and the dish is ready to serve.
