SPICE BLENDS

Save some money and make them taste just the way you like them by making your own spice blends.

SOY-FREE GLUTEN-FREE OIL-FREE

TOTAL PREP TIME: 5 minutes

YIELD: 3 tablespoons (42 g)

 

INGREDIENTS:

  • Cajun Spice Blend
  • 2 teaspoons paprika
  • 2 teaspoons thyme
  • 1 teaspoon oregano
  • 1 teaspoon marjoram
  • 1 bay leaf or 1/2 teaspoon ground bay leaf
  • 1/2 teaspoon cayenne pepper
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon granulated garlic powder
  • 1/2 teaspoon lemon zest
  • 1/4 teaspoon black pepper
  • 1/8 teaspoon allspice
  • 1/8 teaspoon cloves

 

 

INSTRUCTIONS:

  1. Grind everything together in a spice grinder or in a small food processor for about 10 minutes. If you are using a whole bay leaf, it’s very important that it gets ground into a powder. If you don’t have a spice grinder you can buy powdered bay leaf to use in this.

 

 

DIY POULTRY SEASONING:

TOTAL PREP TIME: 5 minutes

YIELD: 1/3 cup (16 g)

 

INGREDIENTS:

  • 2 tablespoons (4 g) ground sage
  • 2 tablespoons (5.4 g) thyme
  • 1 tablespoon (1.7 g) marjoram
  • 2 teaspoons celery seed

 

INSTRUCTIONS:

  1. Mix everything together and store in an airtight container.

SERVING VARIATION:

  • Poultry Seasoning is a great spice blend to use with chickpeas. The combination of the two is perfect to use in recipes in place of tempeh or seitan. It’s also a great way to veganize some of your favorite childhood dishes.
