Simplest Dal

Simplest Dal is a staple dish of Indian cuisine, known for its comforting and flavorful qualities. INGREDIENTS:

  • 1 cup dried red lentils, washed and picked over
  • 2 tablespoons minced fresh ginger
  • 1 tablespoon minced garlic
  • 4 cardamom pods
  • 1 tablespoon mustard seeds
  • 2 cloves
  • 1 teaspoon cracked black pepper
  • 1 dried ancho or other mild dried chili (optional)
  • Salt
  • 2 tablespoons cold butter or peanut oil (optional)
  • Chopped fresh cilantro leaves for garnish

 

INSTRUCTIONS:

  1. In a saucepan, combine the red lentils, minced ginger, minced garlic, cardamom pods, mustard seeds, cloves, cracked black pepper, and dried chili (if using). Add enough water to cover the ingredients by about 1 inch.
  2. Bring the mixture to a boil, then adjust the heat to a gentle simmer. Cover the saucepan partially and cook, stirring occasionally and adding water if necessary, for 25 to 30 minutes or until the lentils are tender. The consistency should be saucy but not soupy.
  3. Remove the cloves and, if desired, the cardamom pods. Stir in the cold butter or peanut oil if using. Taste the dal and adjust the seasoning with salt and pepper.
  4. Garnish the dal with chopped fresh cilantro leaves and serve hot. Alternatively, you can serve it at room temperature or chilled as a spread on toasted pita or Indian-style flatbread.

 

VARIATIONS:

  1. Dal with Rhubarb: Add 3 or 4 stalks of rhubarb, strings removed and chopped, to the pot along with the other ingredients. The rhubarb will dissolve and infuse the dal with its unique flavor.
  2. Dal with Radish: Peel and cut 1 large daikon radish or smaller white or red radishes into large chunks. Add the radish to the pot along with the other ingredients for a crunchy element in the dal.
  3. Dal with Celery Root: Peel and chop 1 medium celery root (or 2/3 of a large one) and add it to the pot along with the other ingredients. The celery root adds a subtle flavor and texture to the dal.
  4. Dal with Fresh Tomatoes: Core and cut 4 ripe medium tomatoes into wedges. Stir them into the dal during the last 5 minutes of cooking to add vibrant color and a touch of acidity.
  5. Dal with Chaat Masala: Omit the ginger, garlic, cardamom pods, mustard seeds, chili, and cloves from the main recipe. Instead, use a teaspoon or more of chaat masala for a tangy and spicy flavor profile.
