Simple Risotto

Savor the creamy and comforting goodness of Simple Risotto, a classic Italian rice dish that epitomizes comfort food at its finest. Made with Arborio or other short- or medium-grain rice, this risotto showcases the beautiful balance of flavors that comes from slowly simmering the rice in a flavorful stock. The result is a dish with a luscious texture and rich taste that pairs wonderfully with a variety of ingredients. This recipe offers the basic foundation for creating a delectable risotto, and you can easily customize it with variations of your choice, making it a versatile dish for any occasion.

MAKES: 4 to 6 servings

INGREDIENTS:

  • 2 tablespoons butter or extra virgin olive oil, to taste
  • 1 medium onion, chopped
  • Large pinch saffron threads (optional)
  • 1 1/2 cups Arborio or other short- or medium-grain rice
  • Salt and freshly ground black pepper
  • 1/2 cup dry white wine or water
  • 4 to 6 cups chicken, beef, or vegetable stock (or water)
  • 2 to 4 tablespoons softened butter or extra virgin olive oil
  • Freshly grated Parmesan cheese (optional)

 

INSTRUCTIONS:

  1. In a large, deep nonstick skillet over medium heat, melt 2 tablespoons of butter or heat the olive oil. Add the chopped onion and saffron (if using) and cook, stirring occasionally, until the onion softens, about 3 to 5 minutes.
  2. Stir in the rice and cook, stirring occasionally, until it becomes glossy and thoroughly coated with butter or oil, approximately 2 to 3 minutes. Season with a little salt and pepper, then add the white wine. Stir and allow the liquid to simmer away.
  3. Use a ladle to add the stock to the rice, about 1/2 cup at a time, stirring after each addition. Adjust the heat to maintain a gentle simmer and cover the pan.
  4. Continue adding stock and stirring frequently until the rice becomes tender with a slight crunch. This process typically takes around 20 to 30 minutes. Ensure that the mixture is neither soupy nor dry.
  5. Taste the rice 20 minutes after adding it to check for tenderness. Once the rice is cooked to your liking, stir in the softened butter or olive oil (add more for enhanced flavor) and at least 1/2 cup of Parmesan cheese if using. Adjust the seasoning as needed and serve immediately. Provide additional Parmesan at the table if desired.

 

VARIATIONS:

  • Risotto alla Milanese: For the classic variation, add 1/4 cup of chopped prosciutto (or bone marrow) along with the onion and saffron.
  • Risotto with Herbs or Pesto: Enhance the flavor by stirring in 1/4 to 1/2 cup of chopped fresh parsley, basil, dill, mint, chervil, oregano, marjoram, or a combination of herbs. Alternatively, add Traditional Pesto or other herb paste along with the cheese.
  • Risotto with Lemon: Follow the herb variation and, when the rice is almost done, stir in the grated zest of a lemon. Add the lemon juice along with the butter at the end. Serve with Parmesan as directed.
  • Risotto with Three Cheeses: For a truly indulgent treat, replace the Parmesan with equal amounts (1/4 to 1/3 cup each) of grated Parmesan or pecorino Romano, crumbled Gorgonzola or other creamy blue cheese, and shredded or chopped fontina or other semisoft but not-too-mild cheese. Feel free to experiment with other types of cheeses as well.
  • Risotto with Seafood: Modify the recipe by using fish, shrimp, or lobster stock according to the type of seafood you choose. In Step 4, when the rice is almost done, stir in 1 pound of cleaned or shelled shrimp or squid, shucked mussels, thick firm fish fillets (cut into 1-inch chunks), scallops, shelled lobster pieces, or lump crabmeat. Omit the cheese, and add a little extra butter or olive oil when incorporating the seafood.
