INGREDIENTS:

MARINADE:

  • 2 teaspoons arrowroot flour
  • 1 tablespoon wine
  • 1/2 teaspoon salt

 

STIR FRY:

  • 1 pound shrimp, peeled and deveined
  • 2 tablespoons coconut oil
  • 1 tablespoon minced ginger
  • 3 garlic cloves, thinly sliced
  • 1/2 pound snow peas, strings removed
  • 2 teaspoons fish sauce
  • 1/4 cup chicken broth
  • 4 green onions, white and light green parts, diagonally sliced
  • 2 teaspoons dark roasted sesame oil

 

INSTRUCTIONS:

  1. In a bowl, mix together the ingredients for the marinade. Add the shrimp and coat them with the marinade. Let it marinate for 15 minutes while you prepare the snow peas, ginger, and garlic.
  2. Heat the coconut oil in a wok or large skillet over high heat until hot. Add the minced ginger and sliced garlic to the hot oil and stir-fry for about 30 seconds.
  3. Add the marinated shrimp to the wok and stir-fry until they turn pink.
  4. Add the snow peas, fish sauce, and chicken broth to the wok. Stir-fry until the snow peas are crisp-tender and the shrimp is fully cooked.
