Shrimp Cocktail

Shrimp cocktail is a timeless appetizer that has remained popular throughout the years. It’s a classic dish that can be enjoyed on its own or paired with boiled crawfish. This recipe offers a flavorful sauce to complement the shrimp, and provides three alternative ways to serve this delicious appetizer. INGREDIENTS:

  • 1 pound jumbo shrimp (16 to 20)
  • 1/2 cup ketchup
  • 1 teaspoon chili powder
  • 3 tablespoons freshly squeezed lemon juice
  • Salt and freshly ground black pepper
  • 1 tablespoon Worcestershire sauce, or to taste
  • Several drops of Tabasco or other hot sauce
  • 1 tablespoon prepared horseradish, or to taste
  • 1 tablespoon minced onion (optional)
  • Iceberg lettuce (optional)

 

INSTRUCTIONS:

  1. In a large pot, bring water to a boil and add salt. Add the shrimp and cook over medium-low heat until they turn pink all over, usually 3 to 5 minutes.
  2. Drain the cooked shrimp and immediately rinse them in cold water. Peel the shrimp.
  3. In a separate bowl, combine ketchup, chili powder, freshly squeezed lemon juice, salt, black pepper, Worcestershire sauce, Tabasco or hot sauce, prepared horseradish, and minced onion (if using). Mix well and taste the sauce, adjusting the seasoning as needed. For best results, chill both the shrimp and the sauce if time allows.
  4. To serve, place individual portions of shrimp on a bed of lettuce, if desired. Provide each serving with a small bowl of the prepared sauce.

 

SERVING SUGGESTIONS:

  1. Fresh Fruit, Tomato, or Tomatillo Salsa: Skip the ketchup sauce and serve the shrimp with a vibrant and refreshing salsa made with fresh fruit, tomatoes, or tomatillos. See pages 33-35 and 48-50 for salsa recipes.
  2. Flavored Mayonnaise: Add a couple of tablespoons of mayo, cream, or crème fraîche to the cocktail sauce, or serve the shrimp with a flavored mayonnaise. Refer to pages 42-43 for flavored mayo recipes.
  3. Crisp Raw Vegetables: Serve the shrimp and sauce with slices of crisp raw vegetables such as jícama, carrots, radishes, daikon, or chayote. The combination of fresh vegetables and flavorful sauce adds a delightful crunch.
