  2. Once the Dough cycle is complete, gently turn out the dough onto a clean work surface. Divide it into two equal portions and knead each portion into a ball. Cover the balls with a clean tea towel and let them rest for about 10 minutes. As you work, the anticipation builds, knowing that something wonderful is taking shape.
  3. With your fingers, lightly moisten the surface of each dough ball with a touch of olive oil. Gently press down with your palm to flatten them into discs that are about 1 inch thick and 6 inches in diameter.
