INGREDIENTS:

  • 2 large Hachiya persimmons
  • 1 cup milk
  • 1 large egg
  • 1½ tablespoons amber rum

  • 3 tablespoons dark brown sugar
  • 1 tablespoon gluten
  • 2 teaspoons apple pie spice
  • 2 teaspoons salt
  • 2½ teaspoons SAF yeast or 1 tablespoon bread machine yeast
  • 1 cup golden raisins

 

PREPARATIONS:

  1. Cut the soft persimmons in half and use a large spoon to scoop out the inner flesh. Reserve ¾ cup of the persimmon pulp for the bread.

 

INSTRUCTIONS:

  1. Start by placing all the ingredients, except the golden raisins, into the bread machine’s pan. Follow the specified order provided in the manufacturer’s instructions. Be sure to add the reserved persimmon pulp along with the liquid ingredients. Set the crust option to dark and select the Basic or Fruit and Nut cycle. Press the Start button to initiate the baking process.
  2. As prompted by the machine or between the Knead 1 and Knead 2 stages, introduce the golden raisins to the dough. These raisins will add bursts of sweetness and texture to the bread, enhancing each slice with a delightful surprise.
