INGREDIENTS:

Rum Balls

  • 125g Copha
  • 125g dark chocolate
  • 1½ cups cake crumbs (chocolate or plain)
  • 3 tablespoons ground almonds
  • 2 tablespoons rum or brandy

To Coat

  • 100g dark chocolate
  • 30g Copha

Coatings

  • Cocoa powder
  • Chocolate sprinkles
  • Ground praline
  • Shredded coconut

PREPARATIONS:

  1. In a large microwave-safe bowl, melt together the Copha and chocolate on medium power for 1½ minutes, stirring occasionally until the mixture is smooth.
  2. Gently fold the cake crumbs, ground almonds, and rum (or brandy) into the chocolate mixture. Allow the mixture to cool.
  3. Shape the mixture into 16 walnut-sized balls and place them onto a tray lined with baking paper. Refrigerate the rum balls until they become firm.
  4. Melt the remaining Copha and dark chocolate together until smooth.
  5. Insert a bamboo stick into the center of each rum ball and dip it into the chocolate mixture. Roll the rum ball into the desired coating (cocoa powder, chocolate sprinkles, ground praline, or shredded coconut), ensuring an even and generous coating. Allow the rum balls to set.
  6. Repeat the dipping and coating process with the remaining balls. Serve the Rum Balls as desired.
