This is a simple and delicious way to prepare cherry tomatoes. Basil is the classic herb to match with tomatoes, but almost any herb from your kitchen garden will complement their flavor.

INGREDIENTS:
- 2 pints cherry tomatoes, stems removed
- 2 tablespoons extra virgin olive oil
- Salt and freshly ground black pepper
- 1 tablespoon high-quality balsamic vinegar
- 2 tablespoons chopped fresh basil, tarragon, oregano, thyme, rosemary, sage, or cilantro leaves
INSTRUCTIONS:
- Preheat the oven to 425°F.
- In a 9 × 13-inch baking dish, combine the tomatoes and oil and toss to coat. Shake the pan until the tomatoes fall into a single layer.
- Roast for about 20 minutes, until the tomatoes begin to burst their skins, shaking the pan occasionally for even cooking.
- Transfer the tomatoes to a serving bowl. Season with salt and pepper to taste. Drizzle the vinegar over the tomatoes and sprinkle with the herbs. Toss gently. Serve warm.
