Roasted Whole Cherry Tomatoes

A bowl of raw cherry tomatoes on the table is fine, casual dining. Roasting adds a slight smoky aroma and allows the flavor of the herb to soak in. This is a simple and delicious way to prepare cherry tomatoes. Basil is the classic herb to match with tomatoes, but almost any herb from your kitchen garden will complement their flavor.

SERVES 4 TO 6

 

INGREDIENTS:

  • 2 pints cherry tomatoes, stems removed
  • 2 tablespoons extra virgin olive oil
  • Salt and freshly ground black pepper
  • 1 tablespoon high-quality balsamic vinegar
  • 2 tablespoons chopped fresh basil, tarragon, oregano, thyme, rosemary, sage, or cilantro leaves

 

 

INSTRUCTIONS:

  1. Preheat the oven to 425°F.
  2. In a 9 × 13-inch baking dish, combine the tomatoes and oil and toss to coat. Shake the pan until the tomatoes fall into a single layer.
  3. Roast for about 20 minutes, until the tomatoes begin to burst their skins, shaking the pan occasionally for even cooking.
  4. Transfer the tomatoes to a serving bowl. Season with salt and pepper to taste. Drizzle the vinegar over the tomatoes and sprinkle with the herbs. Toss gently. Serve warm.
