  • 2 medium cloves garlic, minced or grated on a Microplane (about 2 teaspoons)
  • 4 anchovy fillets, finely chopped
  • 2 tablespoons finely chopped fresh parsley
  • Kosher salt and freshly ground black pepper

 

INSTRUCTIONS:

  1. Prepare the Bread Crumbs: Tear the dried bread into rough 2-inch pieces and pulse them in a food processor until coarse crumbs are formed.
  2. Cook the Garlic-Anchovy Butter: In a 12-inch heavy-bottomed skillet over medium heat, melt the unsalted butter.
  3. Add the minced garlic and finely chopped anchovies to the skillet, reducing the heat to medium-low. Cook, stirring occasionally, until the garlic is lightly browned, and the anchovies have dissolved, which usually takes about 6 minutes.
  4. Toast the Bread Crumbs: Increase the heat to medium-high and add the bread crumbs to the skillet.
  5. Cook, stirring and tossing constantly, until the bread crumbs are well toasted and browned, approximately 3 minutes.
  6. Add the Finishing Touch: Transfer the toasted bread crumbs to a plate and allow them to cool.
  7. Toss the cooled bread crumbs with the finely chopped fresh parsley and season with kosher salt and freshly ground black pepper to taste.
