INSTRUCTIONS:

  1. In a saucepan, combine the milk, egg yolks, and sugar. Cook over low heat while stirring continuously for about 5-10 minutes, until the mixture thickens and coats the back of a spoon. Remove from heat and allow it to cool to room temperature.
  2. In another saucepan, combine the chopped rhubarb, sliced strawberries, and sugar. Cook over medium heat for 5-10 minutes until the fruits become soft. Remove from heat and let it cool to room temperature.
  3. Stir the whipped heavy cream into the cooled custard mixture. Add the vanilla extract as well as the cooked rhubarb and strawberries. Gently combine all the ingredients to create a uniform mixture.
  4. Transfer the combined mixture into your ice cream maker and churn according to the manufacturer’s instructions. This process will give the gelato its creamy and smooth texture.

SPECIAL INSTRUCTIONS:

  • Ensure that both the custard mixture and the rhubarb-strawberry mixture are cooled to room temperature before combining.
