Red Pepper Dip

This Roasted Red Pepper Dip offers a burst of flavor with its smoky and slightly sweet roasted red peppers, combined with the creamy and tangy farmers’ cheese. INGREDIENTS:

  • 1 pound red peppers
  • 1 cup farmers’ cheese
  • 1/4 cup virgin olive oil or avocado oil
  • 1 tablespoon minced garlic
  • Lemon juice, salt, basil, oregano, red pepper flakes to taste

 

INSTRUCTIONS:

  1. Preheat the oven to broil. Place the red peppers on a baking sheet and broil them, turning occasionally, until the skins are charred and blistered. This process usually takes about 10-15 minutes.
  2. Remove the peppers from the oven and transfer them to a bowl. Cover the bowl with a lid or plastic wrap and let the peppers cool for about 15 minutes. This allows the steam to loosen the skins.
  3. Once the peppers are cool enough to handle, peel off the charred skins. Cut off the stems and remove the seeds. Chop the roasted red peppers into smaller pieces.
  4. In a food processor, combine the roasted red peppers and minced garlic. Process the mixture until smooth and well blended.
  5. Add the farmers’ cheese to the food processor and process again until the mixture becomes smooth and creamy.
  6. With the food processor running, gradually add the olive oil or avocado oil, followed by a squeeze of lemon juice. Continue processing until the dip reaches a smooth and desired consistency.
  7. Season the dip with basil, oregano, red pepper flakes, and salt to taste. Adjust the seasoning according to your preference.
  8. Transfer the roasted red pepper dip to a serving bowl and refrigerate for at least 30 minutes to allow the flavors to meld together.
