Real Refried Beans

Real Refried Beans are a classic and delicious Mexican dish that can be enjoyed as a side dish, filling for tacos or burritos, or as a flavorful dip. While traditionally made with lard, this recipe offers alternatives such as bacon fat, chorizo drippings, butter, or neutral oil. The addition of spices and onions enhances the flavor profile, resulting in a satisfying and versatile dish.

INGREDIENTS:

  • 1/2 cup lard, bacon fat, chorizo drippings, butter, or 1/4 cup neutral oil (grapeseed or corn)
  • 3 to 4 cups drained cooked or canned pinto, pink, or black beans, liquid reserved
  • 1 cup chopped onion
  • 1 tablespoon ground cumin, plus more to taste
  • 1/4 teaspoon cayenne, plus more to taste
  • Salt and freshly ground black pepper
  • Chopped fresh cilantro leaves for garnish (optional)

 

INSTRUCTIONS:

  1. Heat the fat in a large skillet over medium heat.
  2. Add the beans to the skillet and mash them with a large fork or potato masher until they reach the desired texture.
  3. Add the chopped onion, ground cumin, and cayenne to the skillet. Season with salt and pepper.
  4. Cook and mash the beans, stirring occasionally, until they are broken up and the onion is lightly cooked, approximately 5 minutes.
  5. Adjust the consistency of the beans by adding some of the reserved bean liquid. Stir well.
  6. Taste the beans and adjust the seasoning with more cumin, cayenne, salt, or pepper if desired.
  7. Garnish the refried beans with chopped cilantro, if desired.
