  • 1-1/2 cups sliced zucchini
  • 1-1/2 cups chopped tomato
  • 2 tbsp. coconut oil
  • 2 tbsp. chopped garlic
  • 2 tsp. salt and 1 tsp. ground pepper
  • 4 pounds cubed pork

 

INSTRUCTIONS:

  1. Put ingredients in the slow cooker.
  2. Cover, and cook on low for 7 to 9 hours.

 

Once the stew is done, ladle it into bowls and serve piping hot. The combination of tender pork, zucchini, tomato, and corn in a rich, savory broth creates a satisfying and nourishing meal.
