INGREDIENTS:

  • Hedgehog:
    • 250g Copha
    • 4 tablespoons cocoa powder
    • 80g castor sugar
    • 1 egg
    • 250g shortbread biscuits, roughly chopped
    • 50g red jelly lollies, chopped
  • Icing:
    • 30g Copha
    • 125g milk chocolate bits
    • 50g popping candy pieces

 

PREPARATIONS: Hedgehog:

  1. Line the base and sides of a 30 x 15cm slab tin with baking paper.
  2. In a large bowl, combine cocoa powder and castor sugar, mixing well.
  3. Melt Copha in a small saucepan over low heat. Pour melted Copha into the bowl with cocoa powder and sugar mixture.
  4. Stir in the beaten egg until well combined.
  5. Fold in the chopped biscuits and lollies, ensuring they are evenly coated and mixed.
  6. Press the hedgehog mixture firmly into the lined slab tin.

Icing:

  1. Melt the remaining Copha and chocolate together in a bowl. Microwave on 50% power for 1 minute, then stir until well combined.
  2. Spread the chocolate topping mixture evenly over the hedgehog in the tin.
  3. Sprinkle the popping candy pieces over the topping, allowing them to adhere.
  4. Refrigerate the hedgehog for several hours until it sets.
  5. Once set, use a warm wet knife to slice the hedgehog into squares or finger-sized portions.
  6. Serve the Popping Candy Hedgehog as desired.

 

YIELD:

  • The recipe yields approximately 16 squares or 12 finger-sized portions, depending on the size of your cuts.

 

SPECIAL INSTRUCTIONS:

  • Refrigerate the hedgehog for about 40 minutes before slicing to ensure it sets properly.
  • To achieve clean slices, dip your knife in warm water and wipe it between each cut.
