Poached Pears with Vanilla

Pears are transformed into an elegant and light dessert through the process of poaching. This recipe allows you to poach pears at any stage of ripeness, and even unripe pears can become a delightful treat with the addition of sugar in the cooking water. INGREDIENTS:

  • 2 1/2 cups sugar
  • 1/2 vanilla bean, split lengthwise, or one 3-inch cinnamon stick
  • 4 pears

 

INSTRUCTIONS:

  1. In a medium saucepan, combine the sugar and the vanilla bean or cinnamon with 5 cups of water over high heat. Ensure the saucepan is large enough to hold the pears comfortably.
  2. Peel the pears, leaving their stems intact. Core the pears by scooping out the seeds and tough parts from the blossom end using a melon baller, spoon, or paring knife.
  3. Gently lower the pears into the boiling water, and adjust the heat to simmer the liquid. Cook the pears, turning them every 5 minutes or so, until they become tender when prodded with a thin-bladed knife. This typically takes 10 to 20 minutes. Once done, turn off the heat and allow the pears to cool in the liquid.
  4. Transfer the poached pears to individual serving plates. You can cover and refrigerate them for up to a day if desired, but remember to bring them to room temperature before serving.
  5. Meanwhile, reduce the poaching liquid in the saucepan until it becomes a concentrated syrup, approximately one cup or less. This can also be stored for up to a day.
  6. Just before serving, spoon a little of the reduced poaching liquid over each pear to enhance the flavors.
