  2. Add the coconut milk, salt, and heavy cream to the egg mixture. Whisk continuously until all the ingredients are well combined.
  3. Cook the mixture over medium heat, whisking constantly, for 8 – 10 minutes or until it thickens to a custard-like consistency.
  4. Remove the saucepan from the heat.
  5. In a food processor, combine the crushed pineapples, pineapple juice from the can, vanilla, and shredded coconut. Process the mixture until it is well blended.
  6. Stir the pineapple-coconut mixture into the liquid custard. To ensure a smooth texture, strain the mixture through a fine strainer into a plastic bowl.
  7. Cover the bowl and refrigerate the mixture overnight. This resting period allows the flavors to meld and develop.
